Wow! It's been a week since my last post!

Hi All!!
Yes, we are still here.
This past week is sort of a blur, 
right now we are busy doing laundry and packing for out trip out East.
This will be the first time in 5 1/2 years that Trey's family has all been together.
Plus, we get to meet our adorable little nephew!!
We are really looking forward to a fun/wonderful time!

I started my Christmas shopping a few weeks ago.
One of the gifts I ordered for Liam arrived from Amazon and I LOVE it!!
It's a cute little cook book...
(as you all know, my sweet Li Li is a BIG helper in the kitchen)
11 year old Jack Witherspoon, the author of the book,
is from Redondo Beach, CA.
He has had several bouts with cancer :-(
His story is on the inside cover of the book.

It's a must have for Christmas this year!!

On Wednesday night, I had cooking club at my house.
Our theme was "Favorite Holiday Dish"
Tomorrow's blog post will be all about the recipes we brought to the table.
It was a DELICIOUS spread!

Last night was the annual Star Lighting in down town Castle Rock.
I love love love this holiday tradition.
It really made me miss our friend's, the Kolbe Family,
who always made the night so much fun!
Unfortunately, only Liam and I made it out this year...
but had a blast joining our friends, the Salazar Family.
Leighton decided to have one of her wonderful temper tantrums
(a daily occurrence)
and she was not able to go, because she wouldn't get dressed...
(deep breath)

Leighton is going to pick out her own clothes today.
Yes, she is only 2 years old!
A VERY strong personality, my lovely daughter.
I am hoping to avoid daily battles over clothing.
Hopefully this will help...

Oh, but I will.  And I will do it with a smile!

Ahhhh, Friday!

Hello!  And Happy Friday! I made it! Around 3:30pm, every Friday, I start to relax...because I know that Trey is about to come downstairs and "take over".  Today was a particularly hard day, because it was a migraine day.  For those who know me, I have been suffering from horrible migraines 1-2 times a month for the past 10 years.  It's awful, exhausting, and really hard to be a good mom/wife when I feel like I just want to crawl in bed and sleep the day away.  I took two doses of my medicine today, and I am still a little foggy.  I dread these headaches!  And, usually I just try and pretend they aren't happening...hence, me sitting here blogging instead of enjoying the silence while Trey is outside with the kids... Glazed donut muffins

Another long hiatus from blogging... we have been busy making and creating, I just have been really bad about sitting down at the computer and uploading everything! Leighton helping me make Lemon Blueberry Bread. Daddy and Liam were up at Winter Park skiing. Following in big brother's footsteps, she LOVES to cook! Unfortunately, like many of my baking experiments, it failed. The bread needed more lemon (in my humble opinion) and the blueberries needed to be finely chopped... they all sunk to the bottom :( Failure number TWO! Although we had lots of fun making homemade granola, something happened and the "bars" did not solidify. We ended up just eating it plain, Trey had some over ice cream. The recipe calls for butter, brown sugar, oats, and a few TBS of flour. I tried adding dried cranberries and slivered almonds.   I think the cranberries may have been too much for the butter and sugar to caramelize properly. I will try this recipe again though. Pork, black bean, rice and cheese enchiladas

Happy Valentine's Day... a day late! We had a fun, sugared up, and crazy day. I woke up to the best Valentine's Day card I have ever received! Trey and the kids made this huge banner, complete with this list of things they love! If you are having a hard time reading it, don't worry, I did too :) I love you sweetheart!  And your terrible handwriting! One of Liam's Valentine gifts was a Chef's apron and hat. I bought Leighton and I matching ones several months ago.  Liam was bummed and wanted his own. I stumbled across this one on Zulily a few months ago. I think I paid $17.99 for it.  Liam LOVES it! Today he and I made Pork Enchiladas. Ingredients: Half a pork loin cooked and finely diced (I marinated mine with a balsamic glaze a few weeks ago, grilled, and then froze the leftovers) 1 can refried black beans 1/2 bag frozen southwest corn mix 1 bag Uncle Ben's ready to eat brown rice 2 cups shredded cheddar cheese, divided 8 tortillas (I use the raw ones fro...
