Busy week ahead
It's been a crazy busy time lately, with not much cooking going on! Well, there has been some cooking, but nothing to write home about. Tonight I made breakfast burritos for dinner. Flour tortillas (from Costco that are raw, you cook them, and they are AMAZING!) Eggs with cheddar cheese, bacon, avocado, and chipotle sour cream... and watermelon. The kids and Trey love breakfast for dinner! Trey and I had a date night last night. We went to this fantastic little restaurant in downtown Castle Rock called Uniscali. FANTASTIC!! We had a salad as a starter. They came out with this rustic, homemade ciabatta bread... it was sliced, drizzled with olive oil, a bit of balsamic, sea salt, and slightly char grilled...so good!!! I had the salmon with a Parmesan risotto, topped with an apple and red onion slaw. Delish!! Of course, we had dessert. This amazing bread pudding with gelato. We only go out to eat like that every other month or so. And thank goodness! I am still full! On Thursday...
