Easy, yummy breakfast pizza...for dinner!
Our family LOVES eggs! We were lucky enough and recently got a dozen FRESH eggs from our dear friend, Nicole. (someday I will live on an acreage and have chickens too! and alpacas!... but that's a whole 'nother story! ) I found this great recipe for an artisan breakfast pizza. For dinner. Whole grain pizza crust (I bought ours pre made at Vitamin Cottage) shredded cheese (I used Colby Jack because it's what we had, mozzarella would be good) Bacon bits (I diced up and browned about 6 slices of bacon) Fresh and dried herbs, basil and oregano S&P 6 eggs I spread the cheese on the crust, then added the bacon. I sprinkled the herbs on next. Then I made 6 little "wells" in the cheese and bacon topping for the six eggs. I gave a good dousing of black pepper. Popped it in the over for 12 minutes.
