More soup for you!
I made a delicious soup last night,
Tomato Basil Parmesan.
Trey, Liam, and I are all big fans of soup...
Leighton...Not so much!
I started making this soup in the crock pot yesterday morning.
Then I made a delicious roux
(with an entire stick of butter :-)
and finished the soup just before dinner time last night.
I served it with a fresh baguette of french bread.

I kept everything exactly like the recipe called for.
Shocker, I know!!!
The changes I would make next time:
Add 1/4 more fresh basil
substitute 1 cup of milk for 1 cup of half and half.
Start the slow cooking process in the Crock Pot:
1 cup finely diced carrots
1 cup finely diced celery
1 cup finely diced yellow onion
1 tsp minced fresh oregano
1/4 cup minced fresh basil
2 can petite diced tomatoes
4 cups of chicken broth
Set your pot on low and simmer for 5-7 hours until veggies are soft.
In a sauce pan on the stove,
melt 1 stick of butter (1/2 cup) on medium low heat
whisk in 1/2 cup flour and stir continuously for 5-7 minutes.
Slowly add 1 cup of soup mixture into the roux
(mixture will be very thick)
Continue adding 3 more cups (incorporating after each cup)
Take the "roux" mixture and add back into the Crock Pot.
Now add:
1 cup of freshly grated Parmesan cheese
2 cups warmed half and half
S&P to taste
Let flavors blend together for another hour on low.
This picture turned out kind of "orangie"...not the prettiest take on the soup.
But, I assure you, it is delicious!

right now I have to try and get the kids dressed for Christmas photos
before we get hit with a mountain of snow again tonight.
