Butternut Squash Soup with Curry


This is a great soup for the fall/winter!
I would maybe call it a starter soup, or one that pairs well with a half a sandwich.
The flavors are amazing!
I wouldn't call it "kid friendly" either...since Liam refused to take a bite.
I adapted the recipe from Ina Garten and the Food Network website

Here is my version of the soup:
2 pounds butternut squash
(I buy mine already cleaned and cubed from Costco)
1 yellow onion, coarsely chopped
1 apple (I used Honey Crisp, it's what I had), peeled, cored, and chopped up
1 1/2 tablespoon EVOO
Salt & Pepper
2 cans reduced sodium chicken broth
1/4 teaspoon curry powder

Condiments:
chopped chives (green and white parts)
flaked, sweetened coconut, lightly toasted
roasted salted cashews, chopped and toasted
diced banana


Preheat oven to 375 degrees
Combine butternut squash, onion, apple, EVOO, salt & pepper on a large baking sheet
Roast for 35-45 minutes, until veggies are soft
Stir ingredients a couple of times during the cooking process

After roasting!  Yummy!


During the roasting process, simmer one can of chicken broth in a large sauce pan, keep warm.
Put the roasted veggies in a large blender, add the warmed chicken broth and puree until you get a smooth consistency.

Pour the contents of the blender back into the large sauce pan.
Add 1/4 teaspoon curry
Add the other can of chicken broth
(can use less if you want a thicker soup)
Add S&P to taste

Allow soup to heat through for about 10 minutes.
In the meantime, I started toasting my coconut flakes and cashews 


The finished product!
It's a great addition to your next dinner party as a starter,
or just a nice meal on a cold night with a sandwich.

I make mine on the stove with milk and Nutella.
Add a few marshmallows and some whipped cream,
