Pumpkin Spice Latte

 Inspired by my neighbor Vicki, I decided to try and concoct my own version of this delicious latte.
I made quite a mess of the kitchen...


But what I came up with tasted very close to Starbucks.  
Actually, I think mine was better!  :)

Pumpkin Spice Latte

Ingredients:
1/2 cup water
1/2 cup brown sugar (not packed)
3 Tablespoons pumpkin puree
1/8 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice or allspice
a few shakes of nutmeg
Strong brewed coffee
Milk (I used 1.5% cow's milk...but soy, almond or coconut milk would work too)

Bring water to a boil in saucepan.  Add brown sugar and turn heat down to low.  Sugar should quickly dissolve, and then add the rest of the ingredients.  I let mine sit on the burner for about 5 minutes to allow the flavors to come together.  You could pour it through a cheesecloth/double paper towel, but I chose to leave mine "as is".  I poured my milk in a microwavable measuring cup ( I used 1/2 cup ) and nuked it for 45 seconds.  As soon as it came out of the microwave, I hit it with the little portable frother.  I put 4 tablespoons of syrup in my cup, added about a cup of coffee, and the frothed milk.  Garnish with a little whipped cream and a sprinkle of fresh ground cinnamon.  

ENJOY!!!  I seriously cannot wait to make it again tomorrow morning!!  
I saved the rest of the syrup to make Trey and I a wonderful morning cup of joe!  Yay!


My goal tomorrow:  try and make it with LESS sugar...Pure Via & unsweetened coconut milk!
Along with a second try at my Pumpkin Roll!  Gotta put the sugar somewhere!  ha ha!

Before I started this blog, I ordered matching aprons for Leighton and I, and sort of forgot about it.
I ordered them from Zulily, and sometimes their merchandise take FOREVER to get to you.

I found it SO crazy that I ordered these aprons!  
I guess I have some sort of weird attachment to the aqua owl...
Serendipitous?!
BTW, she was helping me make some very delicious pork, black bean, and cheese enchiladas!
