Lasagna Soup
This past weekend, my friend Trisha stopped by with a big bowl full of yummy soup!
Lasagna Soup.
Since Liam has had a constant runny nose and a cough for several days, I decided to pull the recipe off of Pinterest and make a big pot of this delicious concoction...

Here are the pictures, followed by the recipe I used.
(I always tweak recipes a little bit, that's why I am a horrible baker!)
for the soup:
1 Tbsp. olive oil
1 pound mild Italian sausage
1/2 pound ground beef
3/4 cup chopped onions
3 garlic cloves, minced
1 tsp. dried oregano
2 T. tomato paste
1 14.5-oz. can fire roasted diced tomatoes
1 10-oz. can Rotel mild diced tomatoes with chiles
3 14.5-oz. cans low sodium chicken broth
8 oz. mini elbow macaroni
1/2 c. finely chopped fresh basil leaves
salt and freshly ground black pepper, to taste
for the cheesy yum:
8 oz. ricotta
1/2 c. grated Parmesan cheese
1/4 tsp. salt
pinch of freshly ground pepper
2 c. shredded mozzarella cheese
1 pound mild Italian sausage
1/2 pound ground beef
3/4 cup chopped onions

for the cheesy yum:
8 oz. ricotta
1/2 c. grated Parmesan cheese
1/4 tsp. salt
pinch of freshly ground pepper
2 c. shredded mozzarella cheese
Heat olive oil in a large pot over medium heat. Add sausage & ground beef breaking up into bite sized pieces, and brown for about 5 minutes. Drain fat. Add onions and cook until softened, about 4 minutes. Add garlic & oregano. Cook for 1 minute. Add tomato paste and stir well to incorporate. Cook for 3 to 4 minutes.
Add diced tomatoes & chicken stock. Stir to combine. Bring to a boil and then reduce heat and simmer for 30 minutes. Add uncooked pasta and cook until al dente, 8-9 minutes. Do not over cook or let soup simmer for a long period of time at this point, as the pasta will get mushy. Stir in basil and season to taste with salt and freshly ground black pepper.
While the pasta is cooking, prepare the cheesy yum. In a small bowl, combine the ricotta, Parmesan, salt, and pepper.
To serve, place a dollop of the cheesy yum in each soup bowl, ladle the hot soup over the cheese, and sprinkle mozzarella on top.
Servings: 8 ENJOY!!

It's 11:30, time to finally get dressed, have lunch and nap time for Leighton.
I am going to finish putting together Leighton's shelf and make a dessert,
"Not Your Momma's Banana Pudding" from Paula Deen!
It's ridiculously good!
